Potato, Courgette, Sun-dried Tomato & Feta Frittata

IMG_20130407_191702[1]My first frittata ever, this was an absolute dream to make, it’s simple, it’s tasty and probably most importantly for people with fussy eaters, it’s completely flexible.

The sun-dried tomatoes added a really interesting kick of flavour and the bean salad that the Real Olive Company make we served to accompany it really worked too.

As a final vegetable accompaniment we served some amazing green beans with a drop of butter some cracked black pepper and a few scrapes of parmesan.

Recipe: Potato, Courgette, sun-dried Tomato & Feta Frittata

Summary: A beautiful, fresh and tasty frittata, easy to cook, easy to change and delicious.

Ingredients

  • Olive oil
  • 2 small onions diced finely
  • 1 medium courgette diced finely
  • basil and oregano to taste
  • 200g of sun-dried tomatoes
  • 400g of potato
  • 250g feta
  • 6 medium eggs
  • salt & pepper to flavour

Instructions

  1. Boil or steam your potatoes until soft, then put them aside until they cool (i left the skins on, but you can peel them if you like)
  2. Heat the grill to full heat
  3. Heat a large frying pan on a ring with a teaspoon or two of olive oil
  4. Lightly fry your onions and courgette along with a small amount of salt, pepper, oregano and basil for flavouring
  5. Once the onions and courgettes have softened, add the potatoes, sun-dried tomatoes and the feta, making sure to spread them evenly across the whole pan
  6. In a separate bowl lightly beat together your six eggs
  7. When the vegetables and cheese have taken on a little heat pour the beaten eggs over them making sure to spread it out evenly
  8. Give the pan a shake to allow the egg settle down around the ingredients
  9. When the edges of the mix begin to cook but the centre is still soft move the entire pan under the grill (be careful of plastic handles in the heat)
  10. Let the frittata brown nicely under the grill before removing from the heat
  11. Serve immediately or allow to cool
