Anna Olsen’s Chocolate Chip Cookies

Cookies BowlIf you watch Food Network UK (which I’m not ashamed to say that I do), you’ll have seen Baking With Anna which stars the Canadian chef, Anna Olsen. Her precise style has much to recommend itself (as does the show with its old-fashioned but still cool “Here’s One I Cooked Earlier” routines). I’ve become such a fan that I shelled out the cash and postage to get my hands on her pretty excellent cookbook Back To Baking: 200 Timeless Recipes to Bake, Share and Enjoy it really is a great cookbook and is rapidly becoming the third of my “go to” cookbooks (after Delia and The Cookie And Biscuit Bible).

I was baking some cookies for a party last Friday so decided to use Anna’s base recipes and add in chocolate chips. The results were perfection.

Recipe: Anna Olsen’s Chocolate Chip Cookies

Summary: Basic and easy, but most of all, tasty, cookies

Ingredients

  • 1/2 cup (125ml) unsalted butter at room temperature
  • 1/2 cup (125ml) packed light brown sugar
  • 1/4 cup (60ml) sugar
  • 1 egg, at room temperature
  • 1 tsp (5ml) vanilla extract
  • 1 ¼ cups (310ml) all-purpose (plain) flour
  • 2 tbsp (30ml) cornstarch (cornflour)
  • 1/2 tsp (2ml) baking soda
  • 1/2 tsp (2ml) salt
  • 1 cup (250ml) chocolate chips

Instructions

  1. Pre-heat the over to 350°F/175°C
  2. Cream the butter, brown sugar and the sugar together
  3. Beat in the egg and then add the vanilla
  4. In a separate bowl stir the flour, cornstarch, baking soda and the salt together
  5. Add the flour mix to the butter mix gradually and stir until evenly blended
  6. Add the chocolate chips
  7. Drop the dough in tablespoon sized lumps onto baking trays that have been lined with parchment paper keeping them about 4cm apart
  8. Bake for about 10 minutes or until the cookies are just golden brown
  9. Leave them to cool on the tray for 5 minutes before transferring them to a wire rack to finish cooling

Quick notes

It might be easier for Irish folks to just use salted butter and drop the extra salt.
